green split pea soup

ingredients:
1 lb dry green split peas
1 medium size onion chopped
1/2 raw carrot diced
1/2 cup raw potato diced
1 ham bone
3 quarts water

1 bay leave
1/4 tsp allspice
1/4 tsp peppercorn)

note: allspice and peppercorn should be put in a cheesecloth bag and removed after cooking for three hours

instructions:

rinse and sort dry beans. place in kettle with rest of ingredients. bring to a boil and let simmer for about three hours. season to taste.

add more water from time to time if necessary.

put through a sieve, or puree the above after removing the ham bone. add any diced pieces of ham that you have removed from the bone.
reheat and serve.
