poppy's minestrone soup

ingredients:
1/3 cup olive oil
4 tablespoons butter
1 large onion diced
2 large carrots diced
2 large celery stalks diced
2 medium-sized potatoes diced
1/2 pound green beans (cut into 1" pieces)
6 cups water
1/2 small head green cabbage thinly sliced
2 medium sized zucchini diced
1/2 ten ounce bag spinach coarsely sliced
6 beef-flavored bouillon cubes
1 teaspoon salt
1 14 1/2 to 16 ounce can of tomatoes
1 15 to 19 ounce can white cannellini beans, drained
1 15 to 19 ounce can red kidney beans, drained
1/2 cup grated parmigiano cheese

instructions:

In an 8 quart dutch oven or sauce pot, over a high heat, in hot oil and butter or margarine, cook onion, carrots, celery, potatoes and green beans until lightly browned.

add water, cabbage, tomatoes with their liquid, spinach, zucchini, bouillon and salt.

bring to a boil, then reduce heat to low, cover and simmer for 40 minutes, or until the vegetables are tender.

stir in beans and cook over low heat for another 15 minutes.

sprinkle each serving with some cheese.

makes approximately 16 cups or 8 main course servings
